Can I substitute Dutch-process cocoa for natural cocoa?
Yes, 1:1 by volume, but note that natural cocoa is acidic and Dutch-process is neutral. Swapping may affect leavening: if your recipe uses baking soda with natural cocoa, add 1/8 tsp cream of tartar per 3 tbsp when using Dutch-process.
