Formula
All three powders (natural, Dutch-process, raw cacao) substitute 1-for-1 by tablespoon.
For unsweetened chocolate bar: oz = tbsp of cocoa ÷ 3
Conversely, 1 oz unsweetened chocolate bar ≈ 3 tbsp cocoa powder.
How it works
Natural cocoa powder, Dutch-process cocoa, and raw cacao powder are all produced by pressing most of the cocoa butter from cacao solids and grinding the result to a fine powder; their fat contents are similar enough that they substitute 1-for-1 by volume in most recipes. Unsweetened chocolate bars, however, retain their cocoa butter, so 1 oz of chocolate bar (about 28 g) provides approximately the same cocoa solids as 3 tablespoons of powder when you strip out the fat. A common mistake is ignoring the chemical difference between natural and Dutch-process cocoa: natural cocoa is acidic and reacts with baking soda, while Dutch-process is alkalized and requires baking powder as the leavening agent — swapping them without adjusting the leavener can result in a flat or overly dense cake.
Worked example
Substituting 3 tbsp Dutch-process cocoa
- Dutch-process has a factor of 1, so the base tablespoon amount stays at 3 tbsp.
- Natural cocoa: 3 ÷ 1 = 3 tbsp. Raw cacao powder: 3 ÷ 1 = 3 tbsp.
- Unsweetened chocolate bar: 3 ÷ 3 = 1 oz.
3 tbsp Dutch-process = 3 tbsp natural cocoa = 3 tbsp raw cacao = 1 oz unsweetened chocolate
Common mistakes to avoid
- Substituting Dutch-process cocoa for natural cocoa without adjusting the leavening -- Dutch-process is alkalized and does not react with baking soda; using it in place of natural cocoa in a baking-soda-leavened recipe causes flat, dense results.
- Replacing cocoa with an unsweetened chocolate bar without reducing the fat in the recipe -- 1 oz of chocolate bar contains about 8 g of cocoa butter; if you add the bar without removing fat elsewhere, brownies become greasy.
- Assuming raw cacao has identical flavor to roasted cocoa powder -- raw cacao is more bitter and acidic; using it as a 1-for-1 replacement in a milk-chocolate-flavored recipe gives a noticeably sharper, less sweet result.
